• Chicken Tinola
  • Ingredients: 1 medium size chicken cut into serving pieces 1 medium size green papaya cut into 2 x 1 inch pieces (if 'Papaya' is not available use instead 'Chayote') 1 inch piece of ginger cut into thin strips 4 cloves garlic, crushed 1 stem of lemon grass 1 cup of pepper leaves (use a bunch of spinach if not available) Salt or fish sauce to taste Procedure: Add all ingredients in a pot, except for the papaya. Put enough water to cover the chicken. Boil and simmer until the chicken is almost tender. Add the papaya or chayote and cook until it is tender. Add the pepper leaves or spinach. Add salt or sauce sauce to taste. Serve hot in a bowl.
