• GINATAANG MANOK (Chicken in Coconut Milk)
  • Ingredients: 1 chicken (2-3 pounds) cut into serving pieces 1 medium size green papaya cut into about (2 x 1 inch pieces) 1/4 cup vinegar 1/2 cup water 1 can coconut milk 1 inch piece of ginger cut thinly 1 teaspoon ground pepper 2 bay leaves Procedure: Place all ingredients, except for the papaya, in a pot. Let simmer in medium heat for about 15 minutes. Add the papaya and continue to cook until the papaya is soft and the liquid has turned into a thick sauce. Salt to taste. Serve while hot.
