1 lb. ground beef
1 medium onion (yellow or red), sliced
1 clove garlic, crushed
1 medium sized green bell pepper, cored and sliced
1 medium sized red bell pepper, cored and sliced
1 jalapeno, cored and sliced (optional)
green onions, sliced
cilantro (kinchay), chopped
about 2 tablespoons (optional)
salt and pepper to taste
Heat cooking oil in a pan, add garlic and sliced onion, saute until transparent.
Add the green, red and jalapeno peppers, stir for about 1 minute.
Add meat, stir, cook until brown (or until desired degree of color).
Add cilantro and green onions. Salt and pepper to taste.
Simmer for another minute or two.
Serve hot with rice.
